Marcos’s Guacamole

It is recipe Thursday and here’s a family recipe from Marcos, our maintenance account supervisor.  

Marcos’s Guacamole


4 – Tomatoe’s chopped

2 – Avocado’s cut in half, take pit out and save. Cut
avocado in cubes (in the skin) and then use spoon to scoop out cubes and place
in a separate bowl.

1- Bunch of cilantro, chopped from stem up so you do not crush the leaves

1 – Sweet Vidalia onion chopped

2 – Cloves of garlic minced

1 – Lime squeezed for fresh juice

Jalapeno’s chopped to taste.  (Marcos likes to use one jalapeno for each
tomato, use according to how spicy you like it!)

Garlic salt to taste


In a bowl:

Mix chopped tomatoes, onion and jalapeno –stir well

Add chopped cilantro and minced garlic –stir well

Sprinkle garlic salt to taste – stir well

Add fresh squeezed lime juice – stir well

Add cubed avocado – stir well

Add one avocado pit to keep it fresh – (so it doesn’t turn brown)

Serve with your favorite tortilla chips and enjoy!
